James Ng

Driven by the passion and love for travel, Chef James Ng found himself working in hotels at a young age. His journey through many kitchens in Asia and Europe have opened his eyes in learning and understanding different cultures, flavours, regional cuisine, and working with many talented individuals from diversified backgrounds.

James started his career in Calgary, Alberta where he worked at Hy’s Steak House, and then later progressively worked his way in the hotel industries such as the Four Seasons and Rimrock Hotel. He received his culinary certification Red Seal at Southern Alberta Institute of Technology.

Later, Chef James travelled in Asia and worked for the Ritz Carlton and JW Marriott Hotel . While working up the ranks, he was given the opportunity to join an opening task force to assist the launch of JW Marriott Bangkok and JW California Grill in Tokyo where he learned techniques from some of the best chefs in the world. During this period, Chef James took the time to share his culinary expertise by teaching culinary students in Hong Kong as he further developed a greater appreciation for the Pacific Rim cuisine and ingredients.

On his return back to Canada, James found himself working in Montreal, Calgary, and Vancouver working for the Westin, Fairmont, Marriott, Delta Hotels, and some fine dining restaurants and clubs. Prior to joining Tsawwassen Springs, Chef James was the Executive Sous Chef at Vancouver Convention Centre since the winter Olympics in February, 2010, and then became the Chef de Cuisine shortly after he received his designation as Certified Chef de Cuisine in 2019.

Passionate in food and a strong belief in the restaurant and hospitality environment, he is always committed to develop purposeful partnerships with the local farmers and businesses to present the best food for any occasions. Chef James continuously leads with creativity and innovation, and enjoys sharing his knowledge and skills to each person who steps into the kitchen to promote growth within his teams.
